Chef Stephan Pyles Holiday Entertaining Class

A very special holiday cooking class with Chef Stephan Pyles, pioneer of New American Cuisine and legendary founding father of Southwestern Cuisine. The holiday entertaining menu includes: Jicama-Belgian Endive Salad with Spiced Walnuts, Picon Blue Cheese and Pomegranate-Tequila Vinaigrette; Shellfish Pan Roast with Pasilla Capellini Cakes; Roast Goose with Dried Cherry-Chestnut Stuffing and Butternut Squash-Mascarpone Polenta; and Cranberry Pudding Tamales with Orange-Ginger Curd.

Participants will enjoy samples of the multi-course meal demonstrated. Each course will be accompanied by a beverage. Attendees will also receive copies of the recipes prepared and a listing of the wines served. Throughout the demonstration, Chef Pyles will answer questions from the audience.

The class will take place in the restaurant’s private dining room, where a dividing wall opens to the kitchen for demonstrations. Closed-circuit cameras, 42-inch plasma screens and sound system are used to enhance the presentation for guests.
