First Course: Red Chili Sea Scallops (Fresh seared scallops served over crispy cowboy flatbread with sweet yet fiery red chili sauce)
Second Course: Jalapeno Avocado Tzadziki (Greek style cucumber and avocado salad with a Texas twist)
Third Course: Chorizo Lentil Soup (Beef chorizo meat balls and lentils simmered in a zesty broth)
Main Course: Choice of
Stuffed Prime Rib (whole smoked prime rib with a green chili and shitake mushroom stuffing served with a red wine reduction)
or
Butter Seared Snapper Fillet with Mango Salsa
both served with Grilled Sweet Potatoes and Broccoli Rice Casserole
Dessert: Cherry Apple Cobbler (An old chuck wagon favorite made with dried apples and cherries and served with vanilla ice cream)
