Thanksgiving Day Dinner

Three-course dinner as follows:
First course: spiced pork terrine with poached pear; celery remoulade with marinated shellfish; frisee salad with roasted chestnuts and black truffle.
Second course: choice of organic free-range turkey, prime rib of beef, or roasted Diver scallops. With side dishes for the table: spaghetti squash gratin, Yukon gold potato puree, roasted autumn vegetables, roasted mushrooms, sausage-raisin fennel stuffing, cranberry sauce.
Third course: chocolate pecan pie, pumpkin cake, roasted apple and quince, and assortment of ice creams and sorbets.
