Benjamin Desmartins will speak on the myriad of factors involved in making excellent chocolate including the agricultural requirements, cocoa varieties, manufacturing of the finished product, flavors, evolving tastes and the association of chocolate with some alcohols. Upon request, the more economic aspects can be addressed including: Cocoa Exchange, Economic Issues for the producing countries, and the emerging markets in Asia, India and Russia.
The workshop will last approximately 45 minutes, followed by a Q&A with the public and ending with a glass of wine and a tasting to raise awareness of the sensory delight that is fine chocolate.
