Victory Tavern Chef Jim Oetting and Tom Johnson, Silver Oak Ambassador, will be on hand to guide you through this exceptional dining experience and answer your questions about Silver Oak's famous high quality wines.
Great wine is meant to be savored with family and friends - This belief is at the heart of Silver Oak Cellars, where extraordinary Cabernet Sauvignon has been crafted for over 35 years. While the Silver Oak Napa Valley and Alexander Valley Cabernets are distinctively different, they are both famous for Silver Oak's use of exclusive 100% American Oak barrels, which produces a distinct, smooth flavor. Designed to be deliciously drinkable from the day it is released, Silver Oak Cabernet Sauvignon grows more supple and luxurious over time. These wines are a perfect complement to Chef Jim Oetting's rich and tender Kobe Sirloin.
Named for founder Ray Duncan's middle name, Silver Oak's sister winery, Twomey Cellars, was founded to foster Winemaker Daniel Baron's passion for producing other non-Cabernet varietals in a more of a French style and technique, especially Merlot and Pinot Noir. With it's Calistoga fruit and unique production techniques, Twomey's cool climate Pinot Noir is much more substantial than typical central coast offerings. Its full-bodied palate demands complementary strong fare such as Chef Jim's Green Tea Smoked Duck.
