What is Noka Chocolate really worth?
It's great to see local folks covering food, but when Scott at DallasFood.org covers something he really pulls out the stops.
Exhibit: His ten-part investigation into Noka Chocolate, the Plano-based company that, depending on who you listen to, has the most or second-most expensive chocolate in the world. He set out to determine if it was worth the price tag.
For the lazy among you, Scott doesn't recommend running out to buy Noka for Christmas and offers some fine-chocolate alternatives. But, you should really read the whole series, with great photos, research and analysis.

Wow what an amazing series. I personally did a lot of research on chocolate this past summer, and I had the opportunity to taste what are considered some of the best available. A couple of good resources online are <a href="http://www.seventypercent.com">SeventyPercent.com</a> and <a href="http://www.chocosphere.com">Chocosphere</a>.
My personal 2 favorite chocolates are Domori Porcelana and Amedei Chuao. I've never tasted Noka chocolate, but those 2 are leagues above anything I've ever tasted from a chocolatier.

I'm afraid I'm going to have to try some of this. We lived in Brussels for a while. Belgium is touted for having some of the best chocolate in the world. I found some at a shop near our apartment that was 77% cacao - ooooooo mmmmmmmm it was wonderful. Have not seen anything close to it in the US. Noka's "vintages" series claims to be 75%, but I am unfamiliar with the notion of "single source". Hey I'm no expert, just someone who loves chocolate without all the sugar !!

Interesting, Tracy. I got 62% cacao semisweet Scharffen Berger for a chocolate pie and thought it was the most incredible thing in the world. I can't imagine jacking that up higher. Doesn't look like Noka sells baking chocolate.

I wouldn't be a bit surprised if the Belgian-made 77% you had was from Callebaut. Several chocolatiers in the US use Callebaut, including Chocolove, whose bars are available locally at Whole Foods, World Market, and even some Target stores. Look for their "Extra Strong Dark Chocolate" bar, which uses Callebaut's 77%. It might be just what you're looking for.

cool - I'll be going to whole foods in the next few days to pick up a few goodies for our "Night Before the Night Before Christmas Party" at Pearl this Saturday - I'll definitely look for it !! The place I got it in Brussels was a little mom-n-pop chocolatier but they well could have been buying from Callebaut. Thanks for the tip !
