Mansion on Turtle Creek hires new GM, pastry chef, and sommelier

DALLAS — The Rosewood Mansion on Turtle Creek announces the addition of three new members to its food and beverage team: Marcus Cascio as general manager of restaurants, David Collier as executive pastry chef, and Scott Barber as sommelier.

Marcus Cascio brings more than 10 years of food and beverage management experience to The Mansion, including food and beverage director at the Whiteface Lodge in Lake Placid, New York, the Delano Hotel in Miami Beach, Hotel Victor, and the Astor Hotel. In his role at The Mansion, Cascio oversees operations for the redesigned Mansion Restaurant, the Mansion Bar, and the new 20-seat Chef's Room. Cascio received a degree in English literature from the University of California, San Francisco.

Hailing from Washington D.C., new pastry chef David Collier previously oversaw pastry at Kinkead’s American Brasserie and Colvin Run Tavern, two notable D.C.-area restaurants owned by celebrity chef Bob Kinkead. He has experience training with pastry super chef Laurent Lhuillier at Ritz Carlton, Tysons Corner; Collier and his desserts have been featured in Pastry Art & Design Magazine, the Washington Post and Washingtonian. He graduated with distinction from L'Academie D'Cuisine in Gaithersburg, Maryland, and has also trained at the Notter School of Pastry Arts and the World Pastry Forum.

Local wine specialist Scott Barber joins The Mansion as sommelier. Barber was most recently wine director at Stephan Pyles, and has also served as sommelier for the Milestone Culinary Arts Center and as a fine wine consultant for Chateau Wine Market. He is a certified sommelier by the Court of Master Sommeliers, and recently completed a training externship at the renowned French Laundry in Yountville, California. Barber will work directly with wine and beverage director Michael Flynn to supervise the Mansion’s extensive wine and beverage offerings. His passion for wine is matched by his interest in fine art. Barber graduated from Middlebury College in Vermont with a bachelor’s degree in art history and Italian.
