Owners of Bijoux to open restaurant in Westin Galleria Dallas
DALLAS Westin Galleria Dallas, part of Starwood Hotel and Resorts Worldwide, Inc., and Chef Scott and Gina Gottlich, founders of Bijoux Restaurant, today announced plans to develop a new and innovative restaurant concept at the hotel. The yet-to-be-named restaurant is slated to open in 2008.
“For 25 years, our goal has been to provide our guests with everything they need to feel relaxed and rejuvenated, including a remarkable dining experience,” said John Everett, general manager of the Westin Galleria Dallas. “Without question, the new restaurant will provide our guests as well as patrons of the Galleria Dallas shopping center another unique culinary experience to the already dynamic selections in place at the Galleria.”
Chef Gottlich’s partnership will be instrumental in developing the overall vision of the restaurant as well as crafting the menus while continuing his role as executive chef at Bijoux Restaurant, which is located in Inwood Village. Chef Gottlich’s wife and business partner, Gina, will design and develop the restaurant’s distinct elements, atmosphere and beverage selection. The Gottliches have garnered praise from critics at The Dallas Morning News, Texas Monthly, and D Magazine, among many others. Additionally, Bijoux restaurant was named one of the 10 hottest new restaurants in America by Bon Appétit.
"Gina and I focus on not only executing fine cuisine, but offering a total dining experience," said Chef Gottlich. “Westin’s dedication to offering a complete rejuvenation retreat to its guests mirrors our philosophy. We're thrilled to be able to bring our reputation for simple ingredients and classic flavors, to create a unique dining atmosphere just as refreshing and distinctive as the Westin Galleria."
More details about the restaurant, including its executive chef, will be announced in the coming months.

Just last night I was able to obtain a coctail at the second floor and, by my calendar, it's still 2008. Your note reeks of sarcasam, but your well wishes must have paid off regardless!
