Mozzarella Company offering limited-edition Blanca Bianca as its March cheese of the month
Mozzarella Company's March cheese of the month is a special limited-edition cheese called Blanca Bianca. Inspired by cheeses that Mozzarella Company founder Paula Lambert has enjoyed during her travels in France, it's a soft-textured, flavorful cheese, a pale, red-orange-colored wheel about 6 inches in diameter weighing less than two pounds. Because it is a washed rind cheese, it has a pungent aroma that comes from natural bacteria that develops on the exterior of the cheese. It has a tender rind and a creamy interior paste. Its flavor is assertive but not too strong.
To make Blanca Bianca, they take cow's milk, add cultures and rennet, coagulate the milk, cut the curds, stir them gently, pour them into molds, salt them in a brine, then place them on racks to dry. During the next two months, the cheese wheels are "massaged" daily with white wine. U.S. laws governing raw milk cheeses mandate that all raw-milk cheeses must be aged for a minimum of 60 days but Mozzarella ages Blanca Bianca for three to four months which allow the flavor to intensify and texture to soften.
They only produce 20 wheels at a time, so quantities are limited.

with tiny little elf hands? i never thought of white wine as a particularly effective massaging agent. but i'm not sure i want huile d'KY in my cheezes.
perhaps the cheese massages are similar to <a href="http://www.luciesfarm.com/artman/publish/article_39.php">those</a> given to Wagyu cattle before they get marched off to the slaughterhouse?
