Plano resident Lisa Williams was pronounced "Southwest’s Best Campfire Chef" last weekend at Mayfest. She won $1,000 and a trip to New York to compete in the Campfire Classic Grand Championship on Thursday, June 26. The Classic, which will tour five cities during the next month, seeks the country’s best “campicureans” who will cook off for a $10,000 grand prize and $5,000 donation to the national park of their choice.

Her swordfish a roux turtle packs, paired with Redwood Creek’s Pinot Grigio, was her way of satisfying her family’s picky eaters without over-complicating their campsite. She encourages each camper to customize his or her “turtle pack”—a foil packet filled with a swordfish fillet, veggies and tangy condiments—which is nestled directly into a bed of glowing embers.

Having raised two Eagle Scouts, with a third son climbing through the ranks, Lisa has one motto she lives by for cooking outdoors: “Be prepared!” This certainly comes in handy during her annual Thanksgiving campout, where she cooks 20 turkeys complete with all the trimmings, for more than 100 Boy Scouts and their parents.

Starting Thursday, June 10th through Monday, June 23rd, Texans can support their hometown cast-iron chef by voting for Lisa’s recipe online at RedwoodCreek.com and help her earn the $1,000 People’s Choice Award. If she wins the Campfire Classic Grand Prize, Lisa will designate her $5,000 donation to San Antonio’s Missions National Park, which preserves four Spanish missions that stretched across the Spanish Southwest in the 17th and 18th centuries.
