Dallas Fish Market in downtown Dallas hires new sushi chef

Shige Tateno has been appointed Lead Sushi Chef for Dallas Fish Market by owner company Dallas Restaurant Group. Tateno has previously worked at Tom Tom and Sushi Samba.

Shige's specialty sushi menu includes Tuna Duo (toro sashimi, seared tuna on lotus chip), Canary Diamond (kampachi, plum wine gelée, truffle oil, and yuzu), and Double Shot "Shooter" (oyster, uni, sake, tobiko, and chives). Extreme sushi lovers may enjoy Shige's Sashimi Experience or Shige's Sushi Overdose.

Shige blends old world and new world flavors in innovative roll combinations on his Modern Sushi menu, including the Downtown Roll (salmon, cream cheese, lemon zest, cucumber and avocado), Scorpion Roll (soft shell crab, white asparagus and chipotle bbq sauce) and the Hawaiian Roll (tempura shrimp, cream cheese, pineapple and pico de gallo).
