Carolina’s Mexican Cuisine in Dallas opens on Wednesday June 17
Carolina's Mexican Cuisine on Rosemeade Parkway in Dallas is having a grand opening on Wednesday June 17. The opening begins with a private invite-only party and then opens to the public at 9 p.m.
In 2008 Carolina Galvan-Rodriguez capitalized on her many years of experience in doing what she really loves, the restaurant business, and founded After All Restaurant Group, as an opportunity to “do it her way.”
After All Restaurant Group begins with the opening of two locations of Carolina’s Mexican Cuisine in June and two locations of Taco Mundo in July, followed by other restaurant concepts currently in development.
Carolina’s Mexican Cuisine offers nuevo authentic Mexican Food with a Hacienda chic atmosphere. Taco Mundo is a modern-day chic taqueria offering an imaginative twist on many of your favorite Mexican dishes.
Tirzo Martinez Tirzo Martinez began working with Carolina in 1991 as the founding Executive Chef for her first Mi Cocina restaurant at Preston Forest. Carolina and Tirzo went on to open many successful restaurants together. Tirzo has always focused on and taken great pride in selecting the finest quality ingredients and having the cleanest kitchens. He is constantly overseeing the preparation and cooking of meals throughout the day to ensure the last dish is as fresh as the first.
Hugo Cruz began working with Carolina in 1998 as the founding Executive Chef for the first Taco Diner at Preston Center. Hugo and Carolina went on to open four more successful Taco Diner restaurants in the Dallas-Fort Worth metroplex area.
Carolina’s nuevo-authentic Mexican Cuisine fuses design, food, and service into an experience worth remembering. Owner and creator, Carolina Galvan-Rodriguez, welcomes customers into an atmosphere that dazzles the senses and will awaken your palate, where nuevo meets tradition and Mexican hacienda chic.
With 29 years as a restaurateur, Carolina’s Mexican Cuisine offers new flavors and invites you to indulge your taco craving with Brisket Tacos that melt in your mouth, subtly infused with chili peppers and onions. They will change the way you feel about brisket and tacos.
Ceviche made to order “al gusto” (Spanish for as you like), is fresh seafood infused with lime juice, cucumbers, diced tomatoes, onions and Serrano peppers, all prepared just the way you like it. Among the usual cravings and traditional Mexican dishes are authentic versions of Pollo a la Parilla, Sopes, and Steak and Pollo a la Mexicana. Additionally, various items on the menu are offered to be prepared al gusto (as you like).
At the full service bar, don’t forget to try Carolina’s signature margarita, La Bomba (The Bomb). This classic frozen margarita, or on the rocks, is infused with Carolina’s cherished family Sangria recipe that everyone will be talking about. Don’t Blame it on La Bomba!
Enjoy a favorite wine in the lounge or dining room, or step outside into the private patio. The Rosemeade location patio includes a waterfall and lush palm trees. Live music is featured on Thursdays through Saturdays at both locations.

Eclectic, stylish, contemporary, casual Mexican food cafe with a large bustling main dining room, warm, dimly lit cocktail lounge area, and tropical garden patio. The design is a mix of classic iconic mid-century design elements, that one would expect to find in a funky, hip Mexico City taqueria and primitive wood elements reminiscent of a luxurious beach resort. Utilitarian yellow fiberglass shell chairs sit unexpectedly with rustic stained cypress wood banquettes.
The lounge area is defined by rough sewn wood trellis, dappled light, and Mexican stone fountain. Angled walls clad with wide horizontal planks of cypress wood separate the entry lounge from the main dining room. A bold wood clad tower centered in the space opens late night via hinged panels to reveal a DJ booth. Windows at the end of the space look onto a large covered patio with wood screen walls, an outside bar, fireplace, lounge seating and dining tables.
The restaurant was designed by Paul B. Jankowski, architect and Jan M. Martin, interior designer of Z e r o 3, Incorporated, Dallas, Texas. Their other restaurant work includes Mercury Grill, Loft 610, Taco Mundo, Mi Cocina, Taco Diner.
Dave Mueller brings thirty plus years in the industry. Dave has worked for numerous chains. He began with M Crowd when there were only six Mi Cocinas. He became Executive Director of Operations before leaving in 2005. Dave was responsible for all aspects of the company including but not limited to: Management Training and Development, Hiring, Payroll, Purchasing, Budgets, Construction, Repair and Maintenance, Catering, Policies and Procedures. Dave was responsible for 1,400 Managers, and Hourly Employees.
Ramon Cruz worked for M Crowd Restaurant Group for seventeen years. He was part of the opening of the first Mi Cocina. He was the Director of Operations for the Taco Diner concept. Ramon was also Director of Catering for all the M Crowd concepts. Responsibilities also included construction supervision on Taco Diner construction projects, day to day operations, and all day to day and budgetary financials.
