Screen Door in Dallas’ Arts Plaza has new fall menu
DALLAS Executive Chef Fitzgerald Dodd introduces the new fall menu at Screen Door, a modern southern kitchen located in the heart of the Dallas Arts District at One Arts Plaza. Beginning today, guests can enjoy Chef Dodd's seasonal offerings featuring fall produce, heartier meats and the wonderful flavors this season has to offer.
"I am very excited about the items we are featuring this fall, with our continued focus on the best ingredients and locally produced meats and vegetables. We have reinvented some signature dishes, such as the way we are preparing our Maine lobster pot pie and pork chop, as well as adding some selections, such as a Burgundy braised short rib pot roast and, at lunch, a rock shrimp po' boy reminiscent of one of my favorite New Orleans 'hole in the wall' restaurants," remarked Chef Fitzgerald Dodd.
Chef Dodd's autumn menu features dishes created to heighten this season's ingredients, such as Brandied Pear Salad with baby spinach, radicchio and Maytag bleu; Seared Foie Gras au Poivre with sweet potato pain perdu, candied pecans and apple preserves; and the Hand Crafted Sweet Potato Dumplings with housemade tasso ham, brown butter and sage to start. Main Course highlights include House cured Rainbow Trout with shaved fennel, blood orange and smoked almond brittle; Pecan Smoked Pork Chop with Brabant potatoes, bacon-fried tiny cabbage and cider-ham hock gravy; and Burgundy Braised Short Rib "Pot Roast" with celeriac mash, heirloom carrots and cracked pepper jus. Dessert is not forgotten with a new Autumn Spice Cake served with house made cinnamon crème fraiche ice cream.
