Stephan Pyles releases menu for Stephan Pyles Celebrity Chef Dinner on November 8
The menu has been released for the 2009 version of the Stephan Pyles Celebrity Chef Dinner benefiting the Stephan Pyles Culinary Scholarship to take place November 8 at Chef Pyles' flagship restaurant Stephan Pyles.
This is the dinner with five celebrity chefs from throughout the state, including chef Stephan Pyles, presenting a spectacular five-course wine dinner along with a live auction to fund one of the nation's largest culinary scholarships. The scholarship winner will prepare a special appetizer course served during the reception. The short but action-packed live auction will include restaurant packages, rare and fine wines and other luxury items. And the courses are:

• Braised Short Ribs with Pumpkin Risotto and Jalapeno Creme Fraiche
• Seared Scallop with Bacon Chutney and Cilantro Hollandaise
• Smoked Gouda Agniolotte with Butternut squash and Cranberry Coulis
First Course / Executive Chef Vijay Sadhu – Samar by Stephan Pyles: South Indian Crab Soup with Garam Masala, Coconut Curry and Mustard Seeds
Second Course / Executive Chef-Owner Tracy Miller - LOCAL: Pan-seared Hudson Valley Foie Gras and Scratch Texas Toast with Vanilla Bean Steeped Eden Creek Gala Apple and Currant-Sauternes Compote
Third Course / Executive Chef Jason Dady – Chef-Owner The Lodge Restaurant of Castle Hills, Bin 555 Restaurant & Wine Bar, Tre Trattoria, Restaurant Insignia and Two Bros. BBQ Market: Sous Vide of Maine Lobster Tail with Deconstructed “Chowder”
Fourth Course / Executive Chef Matt McCallister & Chef-Owner Stephan Pyles – Stephan Pyles: Juniper-Scented Venison with Saffron Compressed Seckel Pears, Celeriac Tart Tatin, and Cranberry “Air”
Fifth Course / Executive Chef-Chocolatier-Owner Zach Townsend – Pure Chocolate Desserts by Zach: Flourless Chocolate “Intense” Torte with Citron Joconde
