Cavalli Pizza to open branch in McKinney in late August

It's the only Dallas-area pizzeria certified by the Verace Pizza Napoletana.

Cavalli Pizza, the only Dallas-area pizzeria certified by the Verace Pizza Napoletana association as Neapolitan-style pizza like that made in Italy, is expanding beyond its original branch in Irving with a second outlet in McKinney.

The McKinney branch will open at the end of August in the Adriatica complex, a mixed-use development on Virginia Parkway in McKinney, west of US 75.

Husband-and-wife owners Clara and Paolo Cavalli chose McKinney for their second location because they recently moved there, and they fell in love with the complex as a place where their pizza would fit in.

"They're trying to reproduce a European village, with everything rendered in stone," Paolo said. "Eventually, they'll add a farmers market and a lifestyle center and some other shops."

The McKinney Cavalli's will serve pizza and more.

"It'll be the same pizza -- nothing has changed in our recipe, it's the same Neapolitan style, but we're adding a list of what we're calling Italian tapas –- appetizers, first dishes, unique items," he said. "We're also adding a wine bar. We'll have a full bar, and that will be different from Irving."

Speaking of Irving, it's "going great," he said.

"We have a great team of employees," he said. "We recently repainted and have done a couple remodeling projects.

"We've found our demographic there. There's a strong Italian community, and we have people that come from all over. We have a group of pilots who come in from Wichita Falls, and another group of people who drive down from Oklahoma City."

I hope it is all that it is said to be. Cannot find decent pizza or Italian food here in MCK. Just awful, either processed or they have no knowledge on how to make a Marinara sauce. Have to make my own all the time, and it is damn good. But, i would like to go out for it too... that is not happening.

This place wasted my money and two and a half months of my time by telling me to get TABC certified, which costs money, and that i have a job when they open (they told me this 2 months prior to the opening). Then, 3 days before they open they decide to change their mind and not let me bus tables because i couldn't memorize the whole menu. Don't eat here, the owners are scum and the atmosphere is uncomfortable.
