Dallas chef Stephan Pyles to open new restaurant in San Antonio
It'll be in the new Le Meridien Hotel.
Very Important Dallas chef Stephan Pyles will open a new restaurant in San Antonio at a mixed-use development called Eilan, says EscapeHatchDallas.
As he did with Dragonfly restaurant in Uptown Dallas’ Hotel ZaZa, Pyles is designing the flagship restaurant and menu for Eilan’s new Le Meridien Hotel, which Pyles says is slated to open November 11. ...
... Eilan is described as a blend of California Mission, Mission Revival, Spanish Colonial and Mediterranean architecture styles, all topped with housemade guacamole and salsa.
Escape Hatch says that the name Eilan is a derivative of a word from France, and explains the mysticism beyind the 11/11/11 opening date.

Chef Pyles is my favorite. 'just had lunch at his restaurant in Dallas and the new lunch menu is excellent. The red snapper was perfect as was the flat iron steak last week. Of course, I am delighted that the Poblano Asiago soup is back on the lunch menu.
His food is consistently outstanding and beautifully presented.
