Food truck review: Cup-Cakin Machine


The Pumpkin Carrot Cake is a special treat for a cool fall evening.

I love cupcakes! There's so many things to love about cupcakes and when a new flavor crosses my path I'm a happy girl. Last week, not only did a new flavor cross my path, a new cupcake truck crossed my path!

Cup-Cakin Machine is one of the newest food trucks to hit the streets of North Texas. Over the last several weeks, Ashley and her Cup-Cakin Machine have been out and about in Dallas and Arlington introducing themselves. Having already met Ashley, I was very happy to meet several of the cupcakes!

My first meeting with the Buttermilk Maple cupcake. Wow! is pretty much the only way to describe a cupcake that is topped with real bacon! The buttermilk cake was light and moist, the maple frosting was soft, lightly sweet and the bacon added the slight saltiness that made this cupcake one that I want to be part of my dream meal.

Another favorite of Cup-Cakin's cakes was the Red Velvet. It was classic red velvet cake and cream cheese icing. Yum! Sadly, I didn't get a picture of this one. That's the problem with writing about cupcakes is that you get so excited about tasting it that pictures aren't the priority. But trust me, if you like Red Velvet, this is one of the best.

I also had the Classic Vanilla and Classic Chocolate. I am a purist when it comes to chocolate and vanilla cupcakes, and these hit the mark: light cakes, creamy butter cream icing that is not too sweet but just sweet enough to know you are eating good stuff.

And finally, the Pumpkin Carrot Cake. What a special treat for a cool fall evening. The spice of the cake was perfect and the pumpkin added a rich flavor that made this cupcake something special. I love fall and this cake is one of the reasons why!

Outside of cupcakes, Ashley also makes standard size cakes. As a surprise for my birthday last month, my office commissioned Ashley to make me a German Chocolate Cake. I am a German Chocolate Cake snob and this cake was fabulous! The cake was moist, the frosting was spot on, and the customized decoration was perfect.
