Liberty Burger to open second branch at Keller Springs in Dallas
Taking over an old Snookie's space, it'll be full-service with a full bar.
DALLAS Liberty Burger, the burger joint opened in November by Mariel Street, is getting its first sibling: A Liberty Burger will open on Keller Springs Road and the Tollway, in an old Snookie's -- but this one will be a full-service restaurant.
"We're converting my brother's Snookie's into a full-service Liberty Burger," said Mariel. "We're giving it a different model to see how full service runs. The food menu will remain the exact same, but we're going to spruce up the bar, with specialty cocktails, infused vodkas, and fresh juices."
Liberty was conceived by Mariel Street, daughter of Dallas restaurant legend Gene Street, with expertise lent by family members and Gene's long-time associate George Holwerda.
The format at the original branch is fast-casual. You survey a Pei-Wei-like menu mounted on the wall, then place your order with the cashier. You get a number, and a runner delivers your food when it's ready. There are a dozen burger options, ranging from beef to bison to turkey to lamb, priced from $6.50 to $10.
While they are in expansion mode, they're not quite ready for chaindom.
"We're keeping it in the family for the first couple stores -- we're not interested in turning it over to too many hands," Mariel said. "We're going to open a couple more branches, we're looking around at a third and fourth. We've got a couple of spots we're looking at in Plano, off 75, and a couple spots in Fort Worth -- we've had a lot of realtors come over from Fort Worth. None of us are ready to head over there yet. Right now, we're keeping it closer to home."

Saw the sign on Snookies last night that their last day is June 16th. Waitress said Liberty Burger would be open within a month.
RIP Snookies. They were the original home of Drinking Liberally North Dallas (now Addison) exactly 7 years ago this month.
