UPDATED: Eatzi’s in West Plano opens September 20

PLANO After two years of preparation, an Eatzi's specialty grocery store will open in West Plano on
September 12 September 20. It's Plano's first Eatzi's, and the fourth in the Dallas-Fort Worth area.

The store will have all the amenities of a large-sized Eatzi's: the salad and sandwich bar, chef's case with prepared food in the middle of the store, bakery, grill, and grab 'n' go section. Shoppers will also hear opera music playing over the speakers, a trademark for the Design District-based brand.
The new Plano store is located at the northeast corner of Parker Road and the Dallas North Tollway. The 10,000 square foot space is similar to the Eatzi's stores on Oak Lawn in Dallas and in Grapevine, said CEO Adam Romo. (The Lovers Lane location, for comparison, is half its size, at 5,000 square feet.)
Many potential West Plano customers are Eatzi's shoppers already, Romo told us in an interview in January 2013. "They're really just waiting for that location to open," Romo said. "They know the concept, they understand it. … It’s not a brand they have to learn or be taught. That’s really what’s ideal about that location."
One new feature of the Plano Eatzi's is a sushi counter where shoppers can watch sushi being prepared and order specialty items. At other Eatzi's stores, the sushi is made back in the kitchen and sold in the grab 'n' go section.
The executive chef is Tony Guercio, who has worked at Eatzi's in the past as well as Whole Foods. The new store will employ 200 people, Romo said.
