The fresh fish you’ll find at TJ’s Seafood Market don’t arrive that way magically – they’re a result of owner Jon Alexis’ eagle eye for sourcing and finding the best product he can, and the best way to get it from whichever coast it originated to his display counter. It’s not unusual for that to be a proposition that takes less than 24 hours.
But what of those filets that are on the ice? They don’t come to TJ’s that way – it’s in the shop that they filet and cut the fish to the proportions that their customers prefer, and we went in and talked to Chef Scott Hoffner about how they filet one of their most popular proteins of all: salmon.
