Man without hands not allowed to ride Texas Giant

This is a safety issue, not a discrimination issue. Lots of rides at the park require riders to be able to support their upper body. And yes, although people can ride with their hands up, should the ride ever require the riders to hold on they can while this person cannot. It's unfortunate but it's in the name of safety -- let's not forget the person without legs who was recently ejected and killed from a roller coaster.

If they are concerned someone might die from a roller coaster, perhaps there should be more support for someone than just telling them to hang onto a rail with their hands.

You're not going to die by not holding on... There's a possibility of injury though when you're on a ride with all these forces acting on your upper body and you have no way to brace yourself. Roller coasters aren't designed so that everyone can ride regardless of disabilities.
