As a restaurant owner I think it is great. I also hope they are learning about all the city, state and federal regulation such as everyone in the class has to have a food handlers hard. Every restaurant owner must register their employees with the city and pay whatever fees are required. Are they learning to cost all the labor they are currently getting for free? The food cost is it at a realistic number they would need to pay or at the price the school district may be getting? It is not just about having good food. Many good food restaurants fail. Are they learning about debt, leases etc. Just some ideas.
